Kuching Chaozhou Cha
Kueh (stir fried radish cake) is another local delicacy.潮州炒粿,口味分为咸与甜两种。咸的粿 (菜头粿/萝卜糕 -wiki) 在蒸煮时,米糊会加萝卜丝与盐。而甜口味的白粿,则没有加入萝卜丝,米糊会加些白糖调味。
There are two types of Chaozhou Cha Kueh you can requests, savoury (white) and sweet (black) flavors. For savoury version (Fried Radish Cake / Turnip Cake), shredded radish and salt are added during steaming of rice paste. The sweet version is without radish, some sugar added into rice paste while steaming.
炒粿时把粿切成小块状,加上食油在平底圆锅上翻炒,加入蒜米、菜脯碎、鸡蛋及酱油,稍微炒至焦香,別炒得过焦,即呈现出香喷喷的咸炒粿; 而甜口味的炒粿,不加鸡蛋,在炒粿起锅前加了亚答糖或甜浆,即是美味无比的炒甜粿!
During cooking, cakes will cut to small pieces in the flat round frying pan, adding cooking oil, chopped garlic, dried radish, egg and soy sauce, stir-fry until slightly burnt, do not over burnt, which will presents tasty savoury Cha Kueh; Same cooking procedures for the sweet version, but without adding egg, palm sugar or sweat soy sauce added to it for that sweetness, that is the delicious sweet Cha Kueh!
