一周年 One Year Anniversary

一年前为了想知道网上看到的美食是在哪里,而因此开贴询问。无心插柳柳成荫,便促成这个美食帖。光阴似箭,歲月如梭,不知不觉今日迈入一周年。

纯手工鸭蛋面 Handmade Duck egg's Noodle

除了蒸肠粉,黄师傅还买卤肉面、香菇鸡肉面及云吞面。还有面条可是纯手工鸭蛋面!
In addition to steamed rice rolls, Master Bong also serves braised pork noodle, mushrooms and chicken noodle, wanton noodle. And their noodles are handmade duck egg's noodle!

  预约采访那天,黄师傅顺便帮我包起吃剩的云吞面,溜出一句话:打包回去也好吃!尔后回家,面条虽没有了温度,但不油不黏不烂,还合酱汁的香气为一,非常入味~这打包回去也好吃的面条,是鸭蛋做的呀!

第二天见面,黄师傅说昨天没剩什么肉,今天特留了好料。什么好料?我发亮的眼睛瞄到那锅有点肥的卤肉……

师傅坐了下来,轻松聊起自己年少时在沙巴工作,周边有很多一起工作的伙伴和房客,来自香港澳门。有些曾是厨师,常和他大谈厨艺,甚至下厨煮好吃的一起分享。

我这个人比较好学,对很多事情充满好奇,他们讲,我就认真学起来,自己动手做。早期他也卖过鸡饭、肉骨茶好一段时间,后来又改做猪肠粉,做了20年,鸭蛋面是3年多前才开始的。

鸭蛋学

黄师傅说,卖鸭蛋面的想法来自港澳的竹升面,但配合本地人的口味,和方便制作,配方有所改良。

鸭蛋面在古晋只此一家, 连西马沙巴也不多见。因为鲜鸭蛋难找啊! 咸鸭蛋就很多……”他笑着解释, 全蛋面要用鲜鸭蛋黄,才能做到细细Q Q松松,吃不腻!

鸭蛋的结构扎实,烫一下就熟, 熟了变成固体,也不会因为加热变烂,这个原理用在面条也是一样的。打包回去的鸭蛋面才不容易黏黏烂烂变形,还会吸收酱汁变得更入味!

无法大量生产的鸭蛋面条,每隔一两天由黄师傅新鲜手工制作。面条、云吞、叉烧、辣椒酱、叁巴酱、炸蒜油……也是他一手调制。

鸡蛋肠粉Cheong Fun with Egg

广东式蒸肠粉(baidu)不外是,叉烧肠粉、虾仁肠粉、要嘛来个葱花牛肉肠粉。鸡蛋肠粉,还是首次见到。
Guangdong style steamed rice rolls / Cheong Fun (wiki) is nothing more than, char siew rice rolls, shrimp rice rolls, or to go to a spring onion beef rice rolls. Eggs rice rolls (Cheong Fun with Egg), first time I seen.

椰子冰沙 Coconut Shake

Coconut Shake 是一道冷饮,也就是椰子冰沙。在西马很普遍,各州各地的街边都不难看到。其中最为著名是在马六甲,是很多人及电视节目推荐的 - Klebang Original Coconut Shake
Coconut Shake is a cold drink, which is coconut smoothie. It is very common in West Malaysia, easy to find at roadside at every state. The most famous is at Malacca, a lot of people and TV programs recommend.

冰品 Ice Cream Dessert

  Delicia冰品店开业一年多,此前店主余俊强在钟表业待了廿余年,偶然一个机会西马朋友介绍可以引荐冰品进来,恰好他也有意转行便毅然收了钟表店改头换面成今日的“Delicia”冰品店。性质截然不同的店面,让余俊强如此立意坚定的原因在于冰品的千变万化,不同于钟表你只能推销,创意冰品可以添加的食材和吃法太多变了,需要推敲的口味、食材的变化和组合,可以想见的趣味支撑他一路往前走到今天。这里谈的并非自制冰淇淋,余俊强在开业前斟酌了一番,试了不少冰淇淋品牌,最终仍是目前泰国引进的最受他喜爱,一来味道好,二来品质把关严格,品牌人员时不时来监督冰淇淋品质也让余俊强安心。再来,余俊强甚少在本地看见创意冰品,加上自身店面的便利地点,除了道地人还有外国游客加持,而解暑冰品绝对在炽热国度拥有立足之地。
