Shin, established since 1960’s, is recognized by the local as one of the best Kolo Mee legendary in
Kuching.
哥罗面（干捞面）是古晋最为普遍的美食之一，几乎每一家茶餐室都有它的足迹。哥罗面调味不外以猪油混合炸香的蒜米和油葱，添加酱青、白醋、味精和鸡汤，拌捞烫熟的面条，加入猪肉碎及叉烧，再撒些胡椒粉和葱花。
Kolo Mee
(Lo mein: dry noodles) is one of the most
popular food in Kuching, almost every coffee shop selling it. For the
preparation: seasoning with pork lard mix with fried garlic & shallot, adding
soy sauce, vinegar, MSG and chicken stock, mix
with boiled noodles, than add some minced pork and BBQ pork (Char siu), finally sprinkle some white pepper and spring
onion.Kolo Mee can be serving in red and original version. Red serving means adding extra BBQ pork oil, taste will be sweeter and more BBQ flavor.

『古晉潮州炒粿』1 Kuching Chaozhou Cha Kueh
『古晉潮州炒粿』 - 古晋的古早味小吃之一。
Kuching Chaozhou Cha
Kueh (stir fried radish cake) is another local delicacy.潮州炒粿，口味分为咸与甜两种。咸的粿 (菜头粿/萝卜糕 -wiki) 在蒸煮时，米糊会加萝卜丝与盐。而甜口味的白粿，则没有加入萝卜丝，米糊会加些白糖调味。
There are two types of Chaozhou Cha Kueh you can requests, savoury (white) and sweet (black) flavors. For savoury version (Fried Radish Cake / Turnip Cake), shredded radish and salt are added during steaming of rice paste. The sweet version is without radish, some sugar added into rice paste while steaming.
炒粿时把粿切成小块状，加上食油在平底圆锅上翻炒，加入蒜米、菜脯碎、鸡蛋及酱油，稍微炒至焦香，別炒得过焦，即呈现出香喷喷的咸炒粿; 而甜口味的炒粿，不加鸡蛋，在炒粿起锅前加了亚答糖或甜浆，即是美味无比的炒甜粿!
During cooking, cakes will cut to small pieces in the flat round frying pan, adding cooking oil, chopped garlic, dried radish, egg and soy sauce, stir-fry until slightly burnt, do not over burnt, which will presents tasty savoury Cha Kueh; Same cooking procedures for the sweet version, but without adding egg, palm sugar or sweat soy sauce added to it for that sweetness, that is the delicious sweet Cha Kueh!
