『古晉潮州炒粿』1 Kuching Chaozhou Cha Kueh

『古晉潮州炒粿』 - 古晋的古早味小吃之一。

Kuching Chaozhou Cha Kueh  (stir fried radish cake) is another local delicacy.

 潮州炒粿，口味分为咸与甜两种。咸的粿 (菜头粿/萝卜糕 -wiki) 在蒸煮时，米糊会加萝卜丝与盐。而甜口味的白粿，则没有加入萝卜丝，米糊会加些白糖调味。
There are two types of Chaozhou Cha Kueh you can requests, savoury (white) and sweet (black) flavors. For savoury version (Fried Radish Cake / Turnip Cake), shredded radish and salt are added during steaming of rice paste. The sweet version is without radish, some sugar added into rice paste while steaming.

炒粿时把粿切成小块状，加上食油在平底圆锅上翻炒，加入蒜米、菜脯碎、鸡蛋及酱油，稍微炒至焦香，別炒得过焦，即呈现出香喷喷的咸炒粿; 而甜口味的炒粿，不加鸡蛋，在炒粿起锅前加了亚答糖或甜浆，即是美味无比的炒甜粿!
During cooking, cakes will cut to small pieces in the flat round frying pan, adding cooking oil, chopped garlic, dried radish, egg and soy sauce, stir-fry until slightly burnt, do not over burnt, which will presents tasty savoury Cha Kueh; Same cooking procedures for the sweet version, but without adding egg, palm sugar or sweat soy sauce added to it for that sweetness, that is the delicious sweet Cha Kueh!

『古晉蚝煎』Kuching Oyster Omelette

『古晉蚝煎』，是道地美食之一，在古晉非常普遍，几乎每间大小餐馆都会有此道菜肴。口感里外都薄脆，吃起来像虾饼，有别于一般的潮州蚝煎。

"Kuching Oyster Omelette", very common in Kuching. It is one of the local delicacy, almost every restaurant serving this dish. The food is crispy inside out, tastes like shrimp cracker, defiantly different from the authentic Chaozhou version of oyster omelette.

古晉不可错过的古早美食之一: 茄汁果条/面

One of Kuching Must Try Old Food: Tomato Kway Teow / Noodle

茄汁果条在古晋非常普遍，它类似广府炒河粉 (滑蛋河) 或北马的炒大板。配料不外乎蔬菜、肉片、鲜虾、猪内脏、叉烧、鱼丸和鱼饼之类。芡汁中加放了番茄汁，這样就多了红色和甜酸風味; 但对外地人来说未必会马上喜爱或接受!

In Kuching, Tomato Kway Teow (Flat Rice Noodle)  is very common , which is similar to the Cantonese fried rice noodle (Hua dan he) or Northern Malaysia Chao da ban. The ingredients nothing than vegetables, pork meat, shrimp, pig offal, BBQ pork, fish ball and fish cake,  seasoning with extra tomato paste, so in will be red colour with sweet and sour flavour; but outsiders may not immediately like it or accept!

茄汁面 - 通常是用炸香了的细面条（外型像广府伊面），口感极脆；此外，也有人用炒香了的细面条和炸香的粗面条，味道相当古早。

Tomato Noodles - usually with thin Fried noodle (looks like Cantonese Yi mein), it's very crisp; Moreover, some use on the spot fry thin noodle or deep fired coarse noodle, this is quite old days taste.
